In D Kitch

The thin wooden chopsticks felt light and smooth. They were hard to manage with my unpracticed fingers. I grabbed a spoon to compensate. One of those plastic short spoons with a large, squarish bottomed sipping bowl, and a little lip for my index finger to rest under. I tossed in a handful of bean sprouts, cilantro and basil. Squeezed that quarter lime. Stirred the thin noodles together with the brisket and sockeye steak. Took my first sip. Meh. It was okay. Didn't blow my mind (the brisket kinda blew my mind). But I knew that going into this. That's just how pho is. 

Pho is the mother of the food world. Nurturing. But tells it to you straight. "Here's the vegetables you need. You'll feel great while you run on this. But you'll just feel meh while you slurp it down." It's not a McDonald's cheeseburger that'll send your tastebuds to the moon. And then leave you high and dry and ready for a nap. McDonald's is the whore of the food world. 

I jammed my pointy straw into my Vietnamese iced coffee. NOW THAT SHIT IS FIRE. It's kind of McDonaldsy though. Nothing like a gallon of condensed milk and coffee to clean your colon and prep you for a nap. 

Had to balance my healthy meal with a thousand grams of sugar. 

And I've heard sugar isn't good for us. But what is "good"? Maybe goodness is subjective. But I guess if sugar turns 100% of the population into diabetics, it quickly descends into the "objectively bad" category.

That's all "objective" truths are then, I guess: "Hey here's what happens 99% of the time under ______ circumstances".

Then again the sun "objectively" orbited the earth until new data came along to change some people's minds. 

Objective truths only seem to last as long as it takes for someone smarter to come along.

Let's give our flat earthers some love. They're just waiting on that new data to drop. They can't wait to say "told ya so".

Maybe in 500 years our future kids will be genetically modified to run on sugar and red meat and whatever else tastes good.
